Week 12 -- time for chili!
Here's a fast to assemble, good to enjoy on a snowy day kind of meal. Enjoy! (I'll post a pic soon!)
1 medium sweet potato, washed and sliced thin
1/4 bag of frozen spinach, thawed
16 oz can of chili beans
10 oz can of enchilada sauce
1/8 cup Monterey jack cheese
Preheat the oven to 400. Assemble all the items except the cheese & pour into a 9 x 12 baking dish. Top with cheese. Cover & bake for 45 minutes. Serve over chips or with corn tortillas.
